Biscuits
I made buttermilk biscuits with regular milk. Needless to say, they didn’t rise much. I dislike my biscuits, so I’m starting over. Here is an extremely simple biscuit recipe:
1 cup flour
1/2 Tbl baking powder
1/2 tsp salt
3 Tbl butter
1/3 cup milk
They were also hockey pucks. The recipe is quartered, so there is rounding error. It definitely needs more butter, so 4 Tbl, next time.
I’ve written about baking powder before. There shouldn’t be a need to add acid to it.
It’s also a bit dry. First step: Convert to weight.
120 g flour
1/2 Tbl baking powder
1/2 tsp salt
4 Tbl butter
80 g milk
This will allow better tweaking of the flour/milk ratio.
First experiment: 1 Tbl baking powder. Probably next Sunday.
