Speaking of late posts, the danish saga is four batches behind! I’ve been experimenting with the original recipe from #42.
I was in a hurry, so I did it without all the resting steps. They turned out fine – although I did let them sit ready-to-bake overnight in the refrigerator.
I had left-over lemon curd from #48. I made half batch from the original recipe. The dough was fine in the stand mixer, but that small an amount of cheese required manual mixing, which ended up a bit chunky. I didn’t much care for them (too lemon-y), but they were well received – but who bad mouths free pastry?
The Laird asked why not make a peanut butter and jelly version? For Valentine’s Day, I made them layered – a round (biscuit cutter) with a heart cutout on top – filled with strawberry jam and the cheese (with half goat cheese) and topped chopped peanuts. That worked OK, but the rising dough mostly obliterated the heart shapes. They were very tasty!
With the left-over dough from that, I made four peanut-butter and jelly squarish ones (without cheese). They were delicious. Best PB&J sandwich, evah!
All that and no pictures. I was in a bit of a hurry with all of them, but taking a picture doesn’t take long!
