It’s neither Irish nor Potato. I stumbled across this recipe years ago. For whatever reason, there has been a photocopy of some newspaper/magazine recipe for it in my recipe folder (a physical folder, not a computer folder). I finally threw it out a few months back. Then I’m asked to bring something potato-y to a Saint Patrick potluck. Good thing everything is on the Internet. I used a recipe from The Kitchn (yes, the “e” is missing).
As an aside, I purposefully avoid allrecipes (a former favorite) and yummly. The auto-play videos and torrent of advertising make them too annoying.
I had to go shopping. Does anyone have shredded coconut in their pantry? Does it even keep? I also needed powdered sugar after the fondant for the Chess Pie and not-Oreos. That was on sale: One pound bags at 10 for $10. I go through a rather lot of powdered sugar, but 10 pounds seemed a bit much. Conveniently, it was actually $1/bag with my “track everything I buy” grocery card. Butter was also on sale. The Kerry Gold at $3.99/package was a trap; the package is 8 oz. The Tilamook at $5.99/pound was the deal; I got two. I “saved” (whatever that actually means) almost 20%. $17.00 bill with $3 off. I don’t trust that, at all.
Everything worked as expected – and there is no baking!
