Not Oreos

I had two events (dance party and Toastmasters) to bring something to and I’d promised my dance instructor cookies, next time I made them. Hence, cookies. I like not-Oreos. Any resemblance to a trademarked cookie is purely coincidental.

Because I make them softer than the cookie that shall not be named, I was told they are “moon pies”. I thought moon pies were bigger. I’ve now looked it up and they’re definitely not moon pies, which are more like smores. Thankfully, that means that I can stand by my denial, rather than having to accede to someone else being right.

These are easy, now. This is many-th time I’ve made them. The big issue is getting the right amount of fondant. I usually make a full batch of cookies and a half-batch of fondant. This time, I made a double batch of cookies and a full batch of fondant, which is WAY too much. I think I need to divide my fondant recipe into thirds and use a third per batch of cookies.
