Peanut Butter Cookies

Nobody makes peanut butter cookies for Christmas, so I have a good chance to be unique. I went to the Farmer’s Market (mostly to return a big pile of canning jars) and bought more white chocolate peanut butter.

I followed my own suggestion and they turned out better with less flour. This time, I didn’t add any extra. The eggs were unusually small and the dough had the right consistency without it.

I let the dough stand for quite some time (hours) and it was still gritty from the sugar. There’s just nothing in the recipe to dissolve it. Next time, which will be tomorrow, I’m going to try powdered sugar.
