Learning 2 Bake from Scratch – LXIV

Peanut Butter and Jelly Shortbread

This was the previous version with the changes I wanted to try.

I still needed to add water to get something that would roll out. I used only 3 tablespoons (half-ish of 1/3 cup). That worked fine. I made these thicker, so there were many fewer.

I used half the sugar: 1/3 cup. I did it the same way: Weigh the 1/3 cup then swap for powdered sugar. That worked fine – even without frosting/icing.

I put a LOT more powdered sugar into the warmed-to-liquid grape jelly. The grape taste is nearly lost in “OMG! That’s sweet!” It’s still ridiculously sticky. It doesn’t taste like Liquid Nails, but in an adhesive contest, I’m not sure which would win. I’ve come to the conclusion that it’s just not reasonable to make icing from jelly. If/when I do this again, I’m going to start from grape juice, perhaps pre-concentrated, or even grapes if/when the garden starts producing them.
