I’m tired of typing “meringue”. The speech on Pavlova resulted in some extra baked merang. I wasn’t sure what to do with it, so I just threw it in the ‘fridge.
The Pavlovas in the ‘fridge got soggy from the whipped cream soaking in. The blanks got really crispy from the dry refrigerator air sucking the moisture out of them. I took a bite out one: It tasted like stale refrigerator.
I took it out of the ‘fridge and set it on the counter. After a day, it got softer – absorbing moisture from the overly humid air (it’s been unusually humid lately). It still tasted like stale refrigerator.
My point: Merang is a sponge and will soak up whatever is in the air. Store it with care.
