Plumble Pie
Another Four and Twenty Blackbirds recipe for crochet group. Standard crust, plum filling, the same oat crumble on top as the Peach and Cream pie/tart.
I have those little crocks due to Nina, one of my coworkers. The odd thing about that story is that I don’t remember why. I just remember that it’s her fault. Since this pie is supposed to be made in a bowl, they seemed perfect. Until I started putting the crust into them.
Those tall sides create lots of overlapping dough when a round(ish) piece of pastry is shoved into them. I tried to make the crust low so that they would pop out of the crocks, at least theoretically. The boiling filling overflowed, which glued the crusts into the crock.
Rolling out eight crusts took a LONG time. That was definitely the bottleneck in this recipe – although waiting 2 hours for the dishwasher to finish (the crocks were dusty; I don’t use them often) was longer.
They’re also a bit soggy. Even at 425 for 25 minutes, the crust is not really “golden brown”. I’d give it “golden”, but very little brown. It’s probably a good thing they won’t come out of the crocks because the crust isn’t sturdy enough to hold them. I think par/blind baking the crusts first would have had a better result.
I made eight and only six would fit on that tray – one of the largest I have – so I had one for breakfast. Very yummy. I think a piped flower of whipped cream on top would have been excellent, but I have never piped a flower and I didn’t want to start with whipped cream while I was in a hurry (I plated them between work meetings).
