Just Say “no” to Cornmeal

I forgot to take a picture so I’m not going to consume a Learning 2 Bake from Scratch number. Today’s crochet group pie was a peach skillet pie. The recipe called for cornmeal crust. This is not as dramatic as it sounds. It’s not a Dorito(tm) crust. It’s only a 1/4 cup of cornmeal in an otherwise normal, if somewhat wet, crust.

It still absolutely destroys the normal pastry crust texture. It’s chewy.

On the bright side, the bottom wasn’t soggy despite no par/blind baking. It was also easy to roll out because it was so wet – for a pie crust.

The filling was peaches and spice. 2 tablespoons of lemon juice was the only liquid. It had 3 tablespoons of potato starch as a thickener. I 1/24th-ed the peaches (halved the third-ed quarters). It was yummy, but not very pie like. It was just a bunch of peach chunks in a crust.

All around, I’d give this one a “mostly successful but not making it again” rating.
