This spring(*), I changed my bread recipe from 240g (1 cup) of water to 250g. I don’t remember why I did that. Recently, the loaves have been collapsing while baking. Not “collapse to a brick”, but the top middle drops in.
Today, I switched back to 240g of water. The bread did not collapse. A larger sample size is needed, but apparently the 10g of additional water is only needed during the summer.
(*) Or would it be “last spring”? It’s still “this year”, but is the most recent past spring. The upcoming spring is still “next spring”. “This Monday” still refers to the most recent past Monday, not the upcoming one.
